Sate Lilit, Bali's Original Satay

Sate Lilit is Bali's local dishes made from minced meat, or seafood. Sate (Satay) is one of Indonesian dishes. Its a dish of marinated, skewered and grilled meats, served with sauce (mostly peanut sauce). Sate (satay) may consist of diced or sliced chicken, lamb, mutton, beef, pork, fish, tofu, or other meats; the more authentic version uses skewers from midrib of the coconut palm frond, although bamboo skewers are often to used. These are grill or barbecued over a wood or charcoal fire, then served with various spicy seasonings.


In Bali, sate is a popular dishes as well and beside the skewers, Bali has a special sate made from minced meat, or seafood caleed Sate Lilit. Sate lilit usually made on the day when Balinese people do a ceremony, wether religious ceremony or family ceremony such as wedding ceremony. When the Balinese do ceremony, sate lilit has to be done, not just for consumed but also for offering to complete the ceremony. In this case mostly sate lilit made from minced pork and stick around on the bamboo stick.

It's called sate lilit base on how its made. A certain amount of the mixed will be bound on to bamboo stick, to bind the mixed on the bamboo stick called Lilit in Bali language. The mixed is made from minced pork, complete Bali spices, palm sugar,and grated couconut. In a wooden bowl the mixture are combine well and squeeze by hand to firm and bit sticky, so when it bind to the stick it will be stay on. It is look like easy but if we never make it, it is hard to make those mixed stay on the bamboo stick, but mostly Balinese used to it. Then when it will be grilled on the charcoal and splash with cocnut oil to make and get aroma from its smoke.

In it function, sate lilit will be part of the offering for the ceremony and the rest are for consumed by the community who are working together on the ceremony or those who are helping the ceremony to be done. Sate lilit is good to enjoy with white rice, lawar, jukut ares, urutan, and some other fried pork meat. It will be also served on the buffet table for the guest on the family ceremonies reception.

Same as Babi guling, sate lilit is not hard to find now. Before Balinese will eat sate lilit only when there is a ceremony, but now many restaurant in Bali wether its profesional restaurant, hotels, or small local restaurant (warung) served sate lilit, especialy warung that served Babi guling or Bali's food. In some restaurant sate lilit bound on the lemongrass stick and it will make the taste more delicous because of the aroma and juices of the lemongrass. Its also served with some kind of sauce such as peanut sauce, sambal matah, or sambal ulek its depdends on the restaurant standard. In warung babi guling, the portion of nasi babi guling will come with at lest one stick sate lilit. Kori Restaurant and Bar in poppies lane 2 Kuta, one of the restaurant who served sate lilit, it comes on the life charcoal with the smokes of course, with yellow rice and sayur urap.

When you are in Bali, you should try sate lilit if you feel confident to try local dishes, its bit spicy just enough to give you a kick, and it is good to be a bar snack as well.
