Urutan (Bali's Fried Pork Sausage)

Urutan literally meas rubdown or sequence, as the way it made by stick the filling into the long pork intestine then rubdown till it filled up and firm, Balinese people called this traditional pork sausage is Urutan.

This sausage is made manually, ususally served in any of traditional Balinese ceremony on to religion ceremony. Now is way much easier to find, because lot of Balinese restaurant offer this traditional sausage, mostly as a condiment of Babi Guling.


The main ingredient of the sausage is Pork intestine and pork belly. The intestine kept in long size, cutted in about 1 meter cleaned by rinsing, stick the water hose in it and flip inside out then rinse again. The filling is made from pork bellies and some pork meat, its cuts dices and rubbed with a complete blended Balinese spices (Basa Gede). Once the filling mixed with the spices, it ready to be stick into the cleaned intestine manually then rub it down till filled and firm, when it filled up thight the edge with the bamboo string, then deep fried till it crispy. Its so tasty and bit spicy. In order to storage the excess in the family it doesn't storage in the frezzer, this is the unique of this traditional sausage. It round up on a bamboo square and put it at the edge of the pole and sun dried. Every day it will be put under the sun and take into the kitchen at night time, and cutted to deep fried as needed.

The longer it sun dried, taste better. But the fresh one it will be more aromatic and juicy.
